Yummy Mexican Bowl

I came up with this creation just recently and its perfect for the Summer time!
Serving size: 2-3 people
Ingredients:
4-6 chicken tenders
2 lime
packet of fajitas mix (wal mart has a good one)
red & green bell peppers
red onion
EVOO
corn on the cob
cheddar cheese
2 cups rice brown works best
Directions
1. In the morning place chicken tenders in a bowl. Roll the limes on the counter or pop them in the microwave if needed. This will help the juices to flow better when trying to squeeze them. Squeeze the limes on top of the chicken and then add Fajitas mix into the lime and chicken mixture. Let sit and marinate for at least 6-8 hours.
2. When you are ready for dinner get the rice started cooking in a rice cooker. If you do not have a rice cooker please get one! I bought mine at Target for $20- and it has a steamer which I will be using too. 2 cups rice and 4 cups water into the rice cooker and let it start to cook.
3. Take your corn on the cob and break it in half. Place the two ears in the steaming basket and let the magic work.
4. Next I use an indoor grill to cook the chicken you can use a pan if you want to it all taste the same. But get things heated up. Also get out a medium sized pan out to sauté the veggies in. Turn the pan on medium heat. Cut the onion and peppers into strips.
5. Place EVOO into the pan and add veggie. Sauté until caramelized. Next add the chicken to the grill. These should not take very long say about 6 to 8 minutes on each side depending on how big they are. Cook until there is not pink showing.
6. The corn should be ready to take out of the steamer right about now. Place to the side and let it cool. Also take the chicken off the grill and let it cook off.
7. When the rice is done cooking dinner time is almost here! Cut the chicken into little strips or cube it how ever you prefer. Also you will need to run a knife down the side of the cob of the corn to remove the corn.
8. I usually combine all ingredients right into my little rice container its easy and one less thing I have to clean. Put the chicken and veggies all together in the rice and stir.
9. Place desired amount into bowl and top with cheddar cheese. I think adding some cilantro would be awesome too and maybe a dash of hot sauce!

My Favorite Dessert

This recipe is one of my all time favorites in the whole wide world. Some how my Mom and I both came up with the same idea but never told each other about it. I call it Rice Ice Pudding. Here is how the recipe goes.
Serving size 2 people
1 cup sticky white rice
2 cups water
Vanilla Ice Cream
Coconut
Cinnamon (Optional)
Directions:
1. Combine 1 cup rice with 2 cups water in a rice cooker. This usually does not take very long especially when it is a small quantity!
2. Wait for the rice to cook all the way through. While waiting in a small sauce pan on low heat put coconut and toast lightly.
3. Once the rice is cooked. Scoop out into an ice cream container (for some reason I think it personally taste better in a fancy dish) :). Scoop desired amount of ice cream on top. Then top with toasted coconut. If you desire Cinnamon can be sprinkled on.
Personal Suggestion:
If it is just you still make 1 cup of rice because heating up the rice is so easy. Heat it up on the stove top and not the microwave that way the rice will crisp up a little bit and then it will have some crunch to it. I hope that you enjoy!
